Gooey egg & lentil salad

Gooey soft boiled eggs on a tomato, avocado, lentil and baby spinach salad with grated Parmesan cheese! This is a bit of a ‘throw-together’ lunch but is really healthy and tastes amazing! You really can’t go wrong with a couple of gooey boiled eggs on top of anything!

What you need
2 Large free range Eggs
1 tomato or 4 cherry tomatoes
1/2 an avocado
1 handful of baby spinach leaves
1/2 can of cooked lentils
1 handful of grated parmesan cheese
1 tablespoon olive oil
Salt and Pepper

Method
1. Soft boil your eggs on the stovetop (add to boiling water, cook for 6 minutes, put eggs under cold water) or in the microwave, or fry them up on your sandwich press
2. Cut/chop up tomato, avocado and baby spinach
3. Combine your chopped ingredients into a bowl and add half a can of cooked lentils
4. Add lots of yummy grated Parmesan cheese, drizzle with olive oil and add salt and cracked black pepper
5. Break your gooey eggs in half and add to the top of your salad, sprinkle with more grated Parmesan
6. Devour!
