Salt and pepper prawns on a cucumber, coriander and chili salad with a sweet vinegar dressing! No one will believe you made this at work on your sandwich press!!
What you need:
1 Chilli (hotness of your choice)
3 or 4 large raw prawns/Shrimp
1/4 cup rice wine vinegar
1/4 cup hot/boiled water
1/4 cup sugar
1/4 cup rice flour
small handful of Coriander/Cilantro
Black and white pepper
five spice mix
1. Dressing: Add the sugar into a cup and pour over your boiling water to dissolve the sugar. Then add the rice wine vinegar. Chop some of your cucumber into small pieces and add to the mixture.
2. Prawns: combine the sea salt, black and white pepper and five spice into a small bowl. Turn on your sandwich press and put some extra virgin olive on. Coat your peeled raw prawns in the mixture and place on your hot sandwich press. Close the lid to cook both sides of the prawns and cook for 2 minutes. The prawns should have a lightly crispy coating.
3. Salad: combine thin sliced sections of the remaining pat of your cucumber together with coriander/cilantro and some chopped chilli. Easy done!
4. Put the prawns on top of your salad, drizzle with the dressing and eat it all before your friends come and eat it!
